Extreme K9s 101!

Today's extreme K9 is Lucy!



"Lucy a mini Yorkshire terrier was named the "world's smallest working dog" by the Guinness Book of World Records. Lucy, who weighs only 2.5 pounds, works as a therapy dog for Leashes of Love, a program in south New Jersey. Owner Sally Leone Montufar rescued Lucy, nursed her back to health and trained her so that she could help make others happy."

Bone Appetit!

Today's cool recipe is Croque Monsieur pour Vous et le Pup!



"Ingredients:
4 tablespoons butter
1 1/2tablespoons flour
1 cup whole milk
Salt and freshly ground pepper
Pinch ground or grated nutmeg (for the peoples sammies only)
2 teaspoons Dijon mustard (for the peoples sammies only)
8 slices  sandwich bread
8 slices  deli ham
8 slices  Gruyere or Swiss cheese

Directions:
In a small saucepan, melt 2 tablespoons butter over medium heat. Whisk in the flour and cook for 1 minute. Whisk in the milk until thickened, about 5 minutes. Season the sauce with salt to taste. Reserve one-quarter of the sauce for the dogs sammy. Season the remaining sauce with the pepper and nutmeg and whisk in the mustard.
Spread one side each of 6 bread slices with the peoples sauce. Use to make 3 sammies with 2 slices each of ham and cheese. Spread the remaining 2 bread slices with the dogs sauce and then assemble the sammy using the remaining ham and cheese; keep separate.
In a large skillet, melt the remaining 2 tablespoons butter over medium-low heat. Add the sammies and cook, turning once, until golden on both sides, about 4 minutes total. Chop up the pups sammy and let cool, but eat yours hot!"

"French poodles did not originate in France but in Germany (“poodle” comes from the German pudel or pudelhund, meaning “splashing dog”). Some scholars speculate the poodle’s puffs of hair evolved when hunters shaved the poodle for more efficient swimming, while leaving the pom-poms around the major joints to keep them warm."

Today's cool recipe is Mini Muttballs and Ditalini!



"Ingredients:
6 cups chicken broth
Salt
3/4pound ground beef, pork and veal
2 large eggs
1/3cup chopped shredded carrots
1/3cup grated parmigiano-reggiano cheese, plus more for sprinkling
1/3cup bread crumbs
1/4cup finely chopped parsley
1 clove garlic, mashed into a paste with a little salt (optional)
Pepper
1/2 pound ditalini pasta

Directions:
In a large, deep skillet or saucepan, bring the broth to a boil, then salt it and lower to a simmer.
Meanwhile, in a bowl, combine the ground meat, eggs, carrots, cheese, bread crumbs, parsley and garlic paste, if using; season with pepper. Form into 1-inch balls.
Drop the meatballs into the broth and simmer until cooked through, about 5 minutes. Stir in the pasta and cook until al dente, 6 to 7 minutes. Let cool before serving to your pooch! Season the people's portions with salt and pepper and sprinkle with more parmigiano-reggiano."
